Make this Easy, Tea-licious Dessert for Tonight!


Earl Grey Poached Pears with Vanilla Ice Cream


To make the poached pears

4 cups water

2 cups sugar

3 Earl Grey tea bags, tags removed

1 cinnamon stick (plus extras for garnish, optional)

3/4 cup dried cherries

3 medium pears, peeled

1 pint premium vanilla ice cream

Bring water to a boil. Meanwhile, combine sugar, cinnamon and cherries in a medium saucepan. Add the boiling water, and stir to dissolve the sugar. Place the pears and the teabags into the liquid, then, simmer over medium heat until pears are tender (not mushy! approx. 15 to 20 minutes).

Test pears for doneness with a bamboo skewer. When tender, remove from heat and transfer pears to a sealed container to chill, reserving liquid. Remove tea bags from liquid and discard. Bring the liquid to a boil and let it reduce by half. Strain the syrup, cover and set aside to cool before chilling in the refrigerator at least 30 minutes. If garnishing with cinnamon sticks, add them to the syrup before chilling.

To serve

Stand pear in a dessert plate, pour syrup on top, add a scoop of ice cream and garnish plate with cinnamon stick if desired. Makes 3 servings.
